One ideal day by the coast, planned the way we would for ourselves

The hour-by-hour outline of a day at the resort we would craft for ourselves on a Tuesday in late June. Adapt as you wish.

One ideal day by the coast, planned the way we would for ourselves

07:00 · Quiet swim

The pool is empty and the towel service has not begun yet. A coffee cart sits by the entrance with single-origin filter coffee, no menu and no queue. This is the finest half hour of the day.

08:30 · Terrace breakfast

Eggs cooked to order, pastries from the kitchen oven, a modest plate of seasonal fruit. We do not favour breakfast buffets. We favour plates carried by waiters who have looked after the same families for ten years.

10:00 · Spa or sea

Either works. The spa hammam is bright and still in the morning. The sea is calmest before midday. Most guests pick one and wish they had done both; the uncommon guest manages both.

13:30 · Long lunch

Three hours at the lagoon bistro, with a bottle of light white and a plate of grilled fish you did not realise you wanted. No phones, no hurry. This is the meal that stays with you.

18:00 · Golden hour terrace

Aperitif on the upper deck. The bar team will know your name by the second day. The signature negroni is built on a vermouth we produce on-site; it is the most unexpected drink on the property.

21:00 · Tasting menu

Eight courses, two hours, one wine pairing. We have spent years refining this evening. We hope it rewards the journey.

23:30 · A short hour at the table

Or a slow walk back to the suite. Either way: tomorrow begins at 07:00 with a swim, and the cycle is the whole point.
